Masala Chai


Masala Chai - the tea Indians have been drinking for thousands of years

To make this tea we start by toasting cardamom, fennel, cloves, cinnamon and pepper, then give it all a rough grind in the pestle and morter. Ginger powder is added, then we mix these fragrant spices with loose black tea.

For best results make this tea in a saucepan - boil the blend for 5 minutes then add some milk and sugar to taste. Use whole milk, half fat at a push but please not skimmed! Also, brown sugar gives the best flavour. Strain into your favourite teapot and serve.
